Easy Barbecue Sauce Recipe

This classic, smoky-flavoured marinade is very versatile – it’s delicious served as a dipping sauce for fries too. The sauce can be made up to five days ahead of time; simply store it in a screw-top jar in the refrigerator.

Ingredients

  • 300ml Cola
  • 150ml Tomato passata
  • 1 tbsp Clear honey
  • 2 tbsp Worcestershire sauce
  • ½ tsp Ground cumin
  • 15g Butter
  • ½ tsp Smoked paprika

Method

1. The sauce- Put all the ingredients in a small saucepan and bring to the boil. Reduce the heat to low and simmer, uncovered, for 15 minutes or until thick – the mixture should leave a trail on the surface when lifted with a spoon. Taste and season. Reserve one third of the barbecue sauce for basting the meat and marinade for at least 1 hour, preferably overnight
2. To cook- If barbecuing, sear the meat on both sides – or blanch the ribs – then brush with the marinade before cooking. If you’re roasting a whole chicken, rub the sauce all over and cook at 200?C/gas 6 for 1–1½ hours.

Betty’s Own Barbecue Sauce Recipe

Betty’s Own Barbecue Sauce Recipe

In this video, Betty demonstrates how to make her Own Barbecue Sauce recipe that she personally created. It is a sweet and tangy blend of vinegar, ginger, jalapeno peppers, garlic, onion, molasses, ketchup, and orange juice.

Ingredients (plenty for about 5 pounds of meat):

  • 2 cups orange juice
  • 3 tablespoons cider vinegar
  • 3 tablespoons fresh ginger, finely chopped
  • 3 jalapeno peppers, finely chopped
  • 3 cloves garlic, minced
  • 1/4 cup onion, minced
  • ¾ cup molasses
  • ¾ cup ketchup
  • 1 ½ teaspoons freshly ground sea salt
  • 1 teaspoon freshly ground black peppercorns

Method:
In a 13-inch by 9-inch by 2-inch baking pan, combine 2 cups orange juice, 3 tablespoons cider vinegar, 3 tablespoons chopped fresh ginger, 3 chopped jalapenos, 3 minced cloves of garlic, and 1/4 cup minced onion.

At this point, you would add your meat and marinate it for one hour, checking every 15 minutes or so to rotate it if it is not completely covered with the marinade.

(If you are making just the barbecue sauce, you will not need the large baking pan, and you would just start by placing the mixture in a small saucepan.)

If you have used the mixture for marinating your meat, remove your meat from the marinade, and pour the marinade into a small saucepan.

Boil it over high heat, until it is reduced by one-third. Add ¾ cup molasses and ¾ cup ketchup, and cook about 20 minutes, or until thickened to the consistency of barbecue sauce that you like.

Add 1 ½ teaspoons freshly ground sea salt and 1 teaspoon freshly ground black pepper. Use as desired.

You may use this sauce on any kind of meat that you like with barbecue sauce. You may also use it as a dipping sauce for fried chicken fingers and other appetizers.

Betty’s Grilled Ribeye Steak with Onion-Cheese Topping

Betty’s Grilled Ribeye Steak with Onion-Cheese Topping

In this video, Betty demonstrates how to make Grilled Ribeye Steak with Onion-Cheese Topping. The steaks are grilled on an outdoor grill and then topped with French fried onions and shredded cheese. They are returned to the grill for a short time to melt the cheese and blend the flavors.

Ingredients:

  • (2) 1-pound bone-in ribeye steaks
  • Salt, to taste
  • freshly ground black peppercorns, to taste
  • 2 tablespoons extra virgin olive oil
  • French fried onions (enough to cover the steaks in one layer)
  • Shredded or chopped cheese of your choice (I used shredded cheddar on one steak and feta cheese on the other.)

Method:
Remove steaks from refrigerator and let stand at room temperature for about one-half hour. Salt on both sides, to taste. Grind fresh, black peppercorns on both sides, to taste.

Spread both sides with olive oil (using about 2 tablespoons of olive oil). Place the two steaks on a hot grill and watch carefully as they cook, turning once with tongs, and checking occasionally for doneness.

When steaks are done to your liking, place a layer of French fried onions in a single layer over the top of each steak. Over the onion rings, sprinkle a generous amount of cheese. (We used shredded cheddar on one steak and feta cheese on the other steak.)

Let the steaks remain over heat for just a minute or so, until the cheese melts and the flavors are blended. Serve immediately!

Sticky Chicken Wings BBQ Sauce Recipe

The kids especially love to get dirty thats why they will love this Sticky Chicken Wings BBQ Sauce Recipe. Be warned you may need to keep some wet wipes or a cloth nearby to clean their sticky fingers!

 

Ingredients

  • 3lb’s chicken wings
  • 2 tablespoons olive oil
  • 1/2 cup of ketchup sauce
  • 1 cup of honey
  • 1 garlic clove – crushed to tasted
  • 1 pinch of salt
  • 1 pinch of ground black pepper

Method

Mix all the ingredients together and then pour over chicken – leave to marinade for at least 30 minutes.

Bake at 190 celcius for at least 30 minutes before transferring to barbecue for final 10 minutes.

If you are a barbecue master chef – ignore oven and cook on barbecue direct until cooked through.

Ingredients

  • 5 parts Paprika
  • 3 parts Chli Powder
  • 3 parts Brown Sugar
  • 2 parts Kosher Salt
  • 1 part Black Pepper
  • 1 part Onion Powder
  • 1 part Cayenne Pepper

Method

Mix all ingredients well in a mixing bowl – any that is not used can be stored in an airtight jar for next time!

I was at a braai the other day with a whole lot of colleagues from all over the world, and not ONE person knew how to braai properly. And I realised how much science I actually knew about making a good braai.

I warned them about putting the meat on too early as it would burn, and not putting it on while the coals are just lit because it would smoke the food. aaah it was irritating, but south african’s definately know how to braai the best.

Ingredients

1 quart apple cider vinegar
1/2 cup margarine
1 teaspoon cayenne pepper
1 teaspoon Worcestershire sauce
1/2 cup ketchup
1/4 cup brown sugar
salt and pepper to taste

Preparation

In a large saucepan, mix together apple cider vinegar, margarine, cayenne pepper, Worcestershire sauce, ketchup, brown sugar, salt and pepper. Bring to a boil. Reduce heat and simmer 1 hour.

Sweet and Spicy Barbecue Sauce Recipe

Ingredients

1 tbsp olive oil
1 onion, grated
2 garlic cloves, crushed
1 tsp ground coriander
1 tsp ground cumin
1 tsp ground allspice
1/2 tsp cayenne pepper
2 tbsp brown sugar
1 tbsp lemon juice
1/2 cup ketchup
1 tbsp Dijon mustard
1 tbsp worcestershire sauce
1 cup of water
2 sprigs of onions, finely chopped for garnish

Sweet and Spicy Barbecue Sauce Recipe

  • Heat the olive oil in a sauce pan over medium low heat.
  • Add the onion, garlic, coriander, cumin, allspice and cayenne pepper-cook, stirring for 5 minutes or until the onion is soft.
  • Add the brown sugar and lemon juice, and stir until combined.
  • Add the ketchup, Dijon mustard, Worcestershire sauce and 1 cup of water and stir.
  • Season with salt and pepper to taste if you fancy. Increase heat to medium-high and bring the sauce to a boil-constantly stirring, until thickened.
  • Allow to cool slightly, then puree in a blender. If serving as a side sauce, let the sauce cool completely, place in a serving bowl, then add  garnish.
